This is the recipe behind our whole approach to saving money. One Sunday smoke, about two hours of mostly hands-off cooking, and you have ten lunches in the fridge and freezer.
Bone-in thighs are cheap, stay juicy after reheating, and take smoke beautifully. At 275–300°F the skin renders and the meat reaches its tender best at 175–185°F.

Recipe
Step by step
Season
Pat the thighs dry and season all over with the mixed rub.
Smoke
Smoke skin side up at 275–300°F for 1½–2 hours, until the thickest thighs read 175–185°F. Brush with a little BBQ sauce in the last 15 minutes if you like.
Cook the rice and broccoli
While the chicken smokes, cook the rice. Toss the broccoli with oil and salt and roast at 425°F for 15–18 minutes, or steam it for 4 minutes.
Rest and slice
Rest the chicken 10 minutes, then pull the meat off the bones and slice it. Save the bones for stock.
Pack
Divide the rice, broccoli and chicken among 10 containers. Let them cool uncovered for no more than 30 minutes, then lid and refrigerate.
Label and freeze
Keep 4 bowls in the fridge for the next few days and freeze the rest. Label the lids with the day.

Cooked chicken keeps 3–4 days in the fridge, so freeze anything you won't eat by Thursday.
Reheat right
Microwave with a teaspoon of water over the rice, covered, until steaming hot (165°F).
Rotate the sauces
The same chicken tastes new with BBQ sauce on Monday, salsa verde on Tuesday and teriyaki on Wednesday.
Refrigerate bowls for up to 4 days. Freeze up to 2 months and thaw overnight in the fridge before reheating.
USDA safe minimum internal temperatures: 165°F for poultry, 160°F for ground meat, and 145°F with a 3-minute rest for whole cuts of beef and pork and for fish. Use a thermometer, and refrigerate leftovers within 2 hours.
